I grew up loving Pop Tarts. Just the thought of popping them in the toaster and smelling that sweet strawberry smell makes me so happy. I have bought my kids pop tarts a few times ( usually the healthiest organic ones I can find ) but, they still pack a lot of ingredients that are not ideal for breakfast. Being grain free, I haven’t had a pop tart since highschool!
I have been recipe testing with cassava flour for a little over a year now in my quest for grain free goodness. I’ve found it to be an awesome substitute for lots of baking. It is higher in carbs but lower in fat than nut flours and it also seems to yield a less dense result. Most websites will say that cassava is a 1 for 1 substitute for a basic wheat flour. I wish I could remember exactly where I found this recipe. All I know is that I made it a few times, tweaked it a little, added collagen, and now the scribbled instructions are ear-marked in my cooking notebook. Its SO GOOD.
This may seem intimidating at first given the fact that you have to roll out the dough but its really simple and your kids will have so much fun making these. I let Jules make her own glaze and drizzled it over the top, she insisted on adding sprinkles too.
