Im making a Very Conscious effort in my life right now to incorporate more raw vegetables. If I don’t plan ahead I always default to snacking on Nuts or Fruits, Or Crackers of Some Sort. Then dinner comes around and Im trying to cram in as much healthy stuff as possible. I decided to make some things I can keep in my fridge that I can grab when I’m hungry to start getting in a habit of eating veggies ALL DAY. This slaw is one of my favorite new options! I am not on a fully raw diet. I LOVE roasting my veggies. But, I do realize that when you cook your veggies you change the chemistry of the food and lose a lot of enzymes and nutrients.
